Samhain Pumpkin Bread recipe

Hi all,

Here is the recipe for the Samhain Pumpkin Bread which is really a cake and very, very tasty!

Samhain Pumpkin Bread

Pre-heat oven to 120°c

You will need:-
Two small bread tins (1lb size), greased on the bottom only.
Cooling tray

3 Eggs
2 cups Sugar
15oz steamed, mashed pumpkin (cut into 2cm squares and steam for 20 mins)
1 cup Vegetable Oil
2 tsp Vanilla
3 cups Self Raising Flour
1 tsp Salt
1 tsp Baking Powder
1 tsp Baking Soda
2 tsp Cinnamon
½ tsp Nutmeg
¼ tsp Cloves

Method:
Beat eggs in a large mixing bowl. Stir in Sugar, Pumpkin, Oil and Vanilla.
Add dry ingredients and spices and fold in well.
Pour into two prepared bread tins.
Bake on middle shelf for 60 – 80 minutes.
Allow to cool in tins for 10 mins before turning onto cooling tray.
